Being a college student I am all about making meals that take 10 minutes or less! Especially lunch time when my afternoons are busy. Majority of my meals are ones that can be put together in a short time and also be packed a day or two in advance when you really know you’ll be crunched on time.
This salad is loaded with protein, some healthy fats and veggies to keep my fueling all day! This honey roasted turkey breast from Costco is one of my favorites (will post picture of it below). So good to throw in a salad, on a sandwich or heck I even eat it by the slice at times!
- 2 Cups Spinach & Arugula mix
- 4 Roma Tomatos
- Sliced Carrots
- Cucumber Slices
- 3 Slices Honey Roasted Turkey Breast
- 1 Hard Boiled Egg
- 1/4 Cup Broccoli Slaw
- 1/4 Avocado
- I don’t think I can say it any easier than throwing it all in a bowl BUT I do slice up the tomato, carrots, cucumbers, turkey & egg before hand.
- Lastly, add your dressing of choice. The one I used it Boathouse Farms Honey Mustard dressing.
The combination of the honey roasted turkey and honey mustard dressing was SO good, yet there are plenty of other great dressings that you could top this salad with.
Normally would add some sort of cheese, normally feta, but was all out! Feel free to add/sub anything but highly recommend this turkey if you are a Costco Shopper.
