Roasted Breakfast Potatoes

Ingredients:

  • 1 bag red potatoes
  • 3 tbsp extra virgin olive oil
  • 1 tbsp ghee
  • 1 tsp parsley flakes
  • 1 tsp basil flakes
  • 1 tsp salt and pepper

Directions:

  1. Chop the potatoes in to small wedges.
  2. Heat medium skillet over medium heat and add olive oil and ghee.
  3. Once hot add the potatoes. Sprinkle seasonings and pan-fry until golden brown and crisp. About 10-15 minutes.
  4. Remove from pan and serve!
  5. Makes about 3-4 servings!
